Here’s a quickie – yummy afternoon pick-me-up oatmeal

Banana Nut Oatmeal
  • 1 c. oatmeal (not instant)
  • 1 c. water
  • 1 c. unsweetened almond milk
  • 1 T. brown sugar
  • 2 T. raisins
  • 1 T. sunflower seeds
  • 1 T. pecans
  • 2 t. sesame seeds
  • ½ banana, sliced

Mix everything in a pot (a small one).  Bring to a low boil.  Let simmer until the liquid is absorbed, the banana breaks down somewhat and the nuts, seeds and raisins swell and soften. It is SO delicious.
